New Orleans Style Sweet Potato Casserole

2 cups mashed sweet potatoes
1 1/4 c sugar (less if using canned yams)
2 beaten eggs
3/4 stick butter or margarine (melted)
1 cup milk (less if using canned yams)
1/2 t nutmeg
1/2 t cinnamon

Crust
3/4 stick melted butter or margarine
1/2 c chopped pecans
3/4 cup crushed corn flakes
1/2 cup brown sugar

 

  1. Bake and mash sweet potatoes
  2. Add rest of ingredients
  3. Back 20 minutes at 400°
  4. At this point, may be refrigerated or frozen
  5. In a separate bowl, melt butter
  6. Add rest of crust materials to melted butter
  7. Spread over top of mashed yams
  8. Bake for 10 minutes at 400°
