Rolled Tenderloin

4 lb Tenderloin
1 T butter
1 lb mushrooms
8 oz. herbed cream cheese
1/4 cup bread crumbs
1 T fresh chives
2 T Madiera wine
Salt and Pepper to taste
2 sheets Peperidge Farm Frozen Pastry
Beaten egg white

 

  1. Bake meat 50 minutes at 425°.  Remove and let sit 30 minutes
  2. Sautee mushroom in butter
  3. Add Cream cheese, bread crumbs, chives and Madiera
  4. Spray jelly roll pan with Pam
  5. Place meat in center of pastry sheets
  6. Spread mushroom mixture over meat
  7. Seal pastry and decorate by scoring the pastry
  8. Brush with beaten egg
  9. Bring to room temperature
  10. Put back in over for 25 minutes at 425°.
  11. Let sit 15 minutes before serving
