Roasted Potato Salad

3# red potatoes with peels, chopped bite size
2 onions, chopped bite size
6 garlic cloves, diced
1/4 cup olive oil
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup fresh lemon juice
3 tablespoons fresh chives, diced
1/4 cup fresh parsley, diced
2 tablespoons capers, drained

 

  1. Toss potatoes, onions and garlic in olive oil
  2. Bake 30-40 minutes at 400° until tender...cool uncovered in refrigerator
  3. Combine remaining ingredients
  4. Stir mixture into potatoes and onions
  5. Cover and chill
